Per our usual insomnia we couldn’t sleep so we spent last night making several batches of dough starter & various flatbread experiments - did you know some amazing folks have starters 20+ years old ? a whole avenue of cooking science! The yeast we used was over two years old ( unopened ); brought to life with a warm tea mix that it gobbled up so ridiculously quickly it looked sped up.
